Grilled Oregano Chicken

Growing up, I had my fair share of my mother’s favorite sandwich, the BLT.  This grown up version using burrata cheese is a summer staple in my house. Use fresh whole-grain bakery bread for the best results.

BLT CLUB
side: easy cucumber salad

PREP: 15 minutes
COOK: none
YIELD: 4 servings

MAKE AHEAD

  • 8 strips of thick sliced bacon, cooked
  • 2 limes juiced to yield ¼ cup

INGREDIENTS

For BLT club

¼ cup lime juice (2 limes)
1 Tablespoon olive oil
¼ teaspoon kosher salt
Pinch of black pepper
2 ripe avocados, mashed
8 slices whole grain bakery bread, toasted
4 butter lettuce leaf leaves, rinsed and dried
2 medium tomatoes, sliced
1 cup shredded white cheddar cheese OR 3 oz fresh burrata
¼ red onion, thinly sliced (optional)
8 strips of thick sliced bacon, cooked

For easy cucumber salad

2 cucumbers, peeled and sliced thin
¼ red onion, sliced very thin
Leftover buttermilk dressing or pantry dressing (www.thefresh20.com/pantrydressings)
Kosher salt and black pepper

DIRECTIONS

For BLT club

  1. Whisk together lime juice, olive oil, salt and black pepper. Combine with mashed avocado until blended.
  2. Spread avocado over one side of 4 slices of toasted bread.
  3. Place lettuce leaf over avocado, followed by tomato, cheese, onion (optional), and bacon.
  4. Top with another piece of toasted bread.

For easy cucumber salad

Combine cucumbers and red onion with dressing of your choice, sprinkle with salt and pepper and serve chilled.
