Perfect lightened up pot-luck entertaining dish to share with family and friends.
Ingredients

- 2 cups store-bought hummus
- 2 cucumbers, diced
- 1 jar roasted red peppers (in oil), diced
- 1 cup pitted kalamata olives, chopped
- 1 medium tomato or 1/2 pint cherry tomatoes, chopped
- optional: 1/4 cup crumbled feta cheese
- 2 tablespoons freshly chopped parsley
Instructions
- In a 2 quart glass bowl or serving dish, spread the hummus on the bottom.
- Layer the cucumbers, followed by the red peppers, then the olives.
- Next add tomatoes.
- If using feta, sprinkle over tomatoes.
- Top with freshly chopped parsley.
- Serve with an assortment of veggies and/or gluten free chips or crackers.
