Perfect lightened up pot-luck entertaining dish to share with family and friends.

Ingredients

  • 2 cups store-bought hummus
  • 2 cucumbers, diced
  • 1 jar roasted red peppers (in oil), diced
  • 1 cup pitted kalamata olives, chopped
  • 1 medium tomato or 1/2 pint cherry tomatoes, chopped
  • optional: 1/4 cup crumbled feta cheese
  • 2 tablespoons freshly chopped parsley

Instructions

  1. In a 2 quart glass bowl or serving dish, spread the hummus on the bottom.
  2. Layer the cucumbers, followed by the red peppers, then the olives.
  3. Next add tomatoes.
  4. If using feta, sprinkle over tomatoes.
  5. Top with freshly chopped parsley.
  6. Serve with an assortment of veggies and/or gluten free chips or crackers.
