Description

Warm, cinnamon vanilla baked oatmeal with blueberries and bananas.


Ingredients

Units Scale
  • 1 1/4 cup old fashioned oats
  • 3/4 teaspoon baking powder
  • 1 teaspoon cinnamon
  • dash of kosher salt
  • 2/3 cup blueberries (4 ounces)
  • 2 bananas, sliced (2 cups sliced)
  • 1 1/4 cup milk
  • 3 Tablespoons maple syrup
  • 2 eggs
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 400.
  2. Grease 8×8 baking dish.
  3. In a bowl, mix oats, baking powder, cinnamon, salt, blueberries and bananas. Put in baking dish.
  4. In the bowl, whisk the milk, syrup, egg and vanilla. Pour on top of oats.
  5. Cover and bake for about 25-30 minutes. Serve with additional maple syrup if desired.
