Ingredients
- 2 cups of cooked quinoa
- ½ bunch of parsley, chopped
- ½ bunch of mint, chopped
- 3 tomatoes seeded and diced
- 1 large or 2 small cucumbers, seeded and diced
- 1 can organic garbanzo beans, drained and rinsed
- 2 tablespoons of olive oil
- 3 tablespoons of lemon juice
- Sea salt and black pepper to taste

- Combine all ingredients in large bowl, toss and chill for 30 minutes.
