Ingredients

Scale
  • 2 cups of cooked quinoa
  • ½ bunch of parsley, chopped
  • ½ bunch of mint, chopped
  • 3 tomatoes seeded and diced
  • 1 large or 2 small cucumbers, seeded and diced
  • 1 can organic garbanzo beans, drained and rinsed
  • 2 tablespoons of olive oil
  • 3 tablespoons of lemon juice
  • Sea salt and black pepper to taste

Instructions

  1. Combine all ingredients in large bowl, toss and chill for 30 minutes.
