- 1 green apple, cored
- 3 handfuls baby spinach (or kale)
- 1/2 English cucumber
- 1/2 lemon, rind removed
- 1/2-inch piece ginger root, plus more to taste
- Pinch of kosher or sea salt
- Place ingredients in a blender with ½ cup water and more as needed. Blend until smooth.
- Run through a strainer using a spoon to push through the pulp.
- Discard solids. Chill and serve cold.
