Green Juice

Ingredients

  • 1 green apple, cored
  • 3 handfuls baby spinach (or kale)
  • 1/2 English cucumber
  • 1/2 lemon, rind removed
  • 1/2-inch piece ginger root, plus more to taste
  • Pinch of kosher or sea salt

Instructions

  1. Place ingredients in a blender with ½ cup water and more as needed. Blend until smooth.
  2. Run through a strainer using a spoon to push through the pulp.
  3. Discard solids. Chill and serve cold.
