Growing up, I had my fair share of my mother’s favorite sandwich, the BLT. This grown up version using burrata cheese is a summer staple in my house. Use fresh whole-grain bakery bread for the best results.
BLT CLUB
side: easy cucumber salad

MAKE AHEAD
- 8 strips of thick sliced bacon, cooked
- 2 limes juiced to yield ¼ cup
INGREDIENTS
For BLT club
¼ cup lime juice (2 limes)
1 Tablespoon olive oil
¼ teaspoon kosher salt
Pinch of black pepper
2 ripe avocados, mashed
8 slices whole grain bakery bread, toasted
4 butter lettuce leaf leaves, rinsed and dried
2 medium tomatoes, sliced
1 cup shredded white cheddar cheese OR 3 oz fresh burrata
¼ red onion, thinly sliced (optional)
8 strips of thick sliced bacon, cooked
For easy cucumber salad
2 cucumbers, peeled and sliced thin
¼ red onion, sliced very thin
Leftover buttermilk dressing or pantry dressing (www.thefresh20.com/pantrydressings)
Kosher salt and black pepper
DIRECTIONS
For BLT club
- Whisk together lime juice, olive oil, salt and black pepper. Combine with mashed avocado until blended.
- Spread avocado over one side of 4 slices of toasted bread.
- Place lettuce leaf over avocado, followed by tomato, cheese, onion (optional), and bacon.
- Top with another piece of toasted bread.
For easy cucumber salad
Combine cucumbers and red onion with dressing of your choice, sprinkle with salt and pepper and serve chilled.
