Make Your Own Waffle Mix
These easy meal prep waffles keep my house-hold from sliding off the rails. Breakfast (or lack there-of) can make or break our day. We all know the tried and true saying “breakfast is the most important meal of the day.”

What I’ve learned about that over the years is it’s not just for your health, it’s for you mood. Especially when hormones are all over the place! A healthy dose of carbohydrates and natural sugar (like the maple syrup in these waffles) can help you avoid the morning energy slump that can send anyone into a moody tail-spin.
Homemade Toaster Waffles
Enter our super-hero: meal prep. In 3 minutes using 4 ingredients that you’ve likely already got in your pantry, you can prep your own waffle mix. This recipe uses all-purpose flour, but you could sub in whole wheat flour if your family prefers it. Add in a bit of baking powder, baking soda and salt, then voila! Waffle mix.
We make a double batch of this waffle mix, and on Saturdays we turn our kitchen into a waffle factory. I’ve also included our recipe below for the fluffiest, perfectly sweet, crispiest edged meal prep waffles. We make a few for our breakfast that day, then we keep the waffle iron going, cooking up 10-12 extra for the fridge and freezer. These toast up beautifully on busy mornings when our rush needs a bit of extra harmony and there’s little time for a filling breakfast.
