Easy Overnight Oats
We’re an oatmeal-loving family, but it wasn’t always that way for my kids. As a parent who understands, and frankly needs the benefits of this super-food, I set out on a mission to develop a few kid-approved oatmeal recipes. On weekends, we go all out with an oatmeal toppings bar. Weekdays are more of a challenge with limited time in the morning. Overnight oats are a genius solution and I couldn’t be happier that they’re enjoying a major moment in the spotlight as a health trend.
Our household relies on breakfast for our sanity. I don’t care what anyone says, ‘hangry’ is a thing. Without the proper morning fuel, two growing teens and a busy mom and dad become emotional and sometimes downright irrational. Breakfast meal prep might be more important for us than dinner meal prep. These easy, satisfying overnight strawberry oats have saved our mornings more than a few times!
Healthy Breakfast Meal Prep Oats
These strawberry overnight oats are my personal favorite. We’ve always heard that oats are a smart choice for heart health and controlling cholesterol. But there’s WAY more to the oat story. They also contain bioactive phytochemicals with strong antioxidant and anti-inflammatory effects.
Oats also contain more protein than most other grains, and are loaded with vitamins and minerals. One half cup of oats provides 51 grams of carbs, 13 grams of protein, 5 grams of fat and 8 grams of fiber, in just 303 calories. (To be clear, this has nothing to do with calories, but is meant to show how densely and amazingly oatmeal is packed with ALL the good things compared to other grains and foods).
My recipe also includes a bit of greek yogurt and melted almond butter to get that daily dose of probiotics and even more protein! Not to mention the most delicious and crave-able flavor that got my kids hooked on oatmeal.
On top of that, oats can be prepped the night before, so not only is my health receiving the benefit, so is my sanity. Back to school season can be extremely hectic as we all navigate the transition from sleepy summer mornings to days when we wake before the sun rises.

Description
Nutty, satisfying strawberry overnight oats for easy breakfast meal prep
Ingredients
- 1 1/2 cups old fashioned oats
- 1 1/4 cups milk
- 1 1/2 cups greek yogurt
- 2 teaspoons vanilla
- 3 cups strawberries, sliced (1 1/2 pounds)
- 3 Tablespoons honey
- 1/4 cup almond butter (heated)
Instructions
- Combine all ingredients except strawberries and honey.
- Put in individual dishes or bowls
- Cover and refrigerate overnight
- In the morning, top with strawberries and honey, then drizzle almond butter over and serve.
