Strawberry Beet Smoothie
First of all, you’d never guess there are beets hiding in this smoothie. There’s a subtle earthy background flavor, and it does a delicious dance with the sweet strawberries and tart lemon. Bring in the smooth texture from a bit of avocado and a kick of spice — it’s heavenly.
I like to switch up my smoothies to ensure I get a balanced array of vitamins and nutrients, which means that sometimes my daily blend is less about taste and more about its health benefits. But this one, created for us by The Blender Girl, is the one I make when I want the best of both world — delicious AND oh-so-good for my health.
Healthy Detox Smoothie
Usually when you think about a smoothie with powerful detox capabilities, you think green. Bring on the beets. They have a particular phyonutrients, called betalains, that aid the liver in clearing toxins. Betalains are what make beets red (and prone to staining whatever their juice touches, so take care when prepping them). And, these root veggies are full of nutrients like folate, potassium, fiber, vitamin C, iron, and B vitamins.
I also learned this other crazy mind-blowing fact. A strawberry is not a fruit. I know. What?! Since their seeds are on the outside, they actually belong to the rose family of plants. And while were getting all science focused, it’s the anthocyanins in strawberries that do two things: make them red, and contain antioxidant properties. Strawberries are an excellent source of vitamins C and K, fiber, folic acid, manganese and potassium.

Description
Antioxidant-rich red smoothie with sweet strawberries, tangy lemon, earthy beets, creamy avocado and a kick of spice.
Ingredients
- 1 1/4 cups unfiltered apple juice
- 1 cup peeled and chopped beet (grated or steamed if using a conventional blender)
- 1/2 small avocado, pitted and peeled
- 1/2 lemon, peeled and seeded
- 1/8 teaspoon ground cinnamon, plus more to taste
- Pinch of cayenne pepper (optional)
- 2 cups frozen strawberries
Instructions
- Throw all of the ingredients into your blender, and blast on high for 30 to 60 seconds until smooth and creamy.
